Ingredients for Chicken Biryani
Basmati rice-1/2 Kg
Chicken pieces-1/2 Kg
Saffron Strands- A pinch
Green chilies-2 Medium size
Ginger and garlic paste- 1table spoon
Fresh coriander- generous
Cumin powder – 1 teaspoon
Coriander powder- 1Table spoon
Garam masala- 1Table spoon
Kashmiri red chilly powder – 1Table spoon
Dry fruits- 100 g (cashew nuts, almond, raisin)
Oil – Three tablespoon
Gee- 1 tablespoon (optional)
Cardamom – 5 No.
Clove – 6 No.
Cinnamon -2 small pieces
Lemon juice-for one lemon
How to Prepare Chicken Biryani
Marinate the chicken
Make a paste of green chilly, ginger, garlic and coriander. Take the paste in a medium size bowl and put 1 tbsp. cumin seed powder,1 tbsp. coriander seed powder,1 tbsp. garam masala,1 tbsp. Kashmiri red chilly powder,1 tsp. Mix Masala, A generous amount of coriander and 100 to 150 grams of curd. Mix all the ingredients well and coated the chicken with all the Masala. Put this aside for 15-20 minutes.
Make fried onion.
Cut the onion lengthwise, season it with ½ tsp. of salt and ½ tsp. of sugar and set it aside for 15 minutes. The onion slices will release some of its juices because of the salt and sugar. Squeeze all the water out with your hands. Then fry it in the hot oil until it crisps up and browns.
Steaming the rice for Chicken Biryani
Soak the Basmati rice for 15 minutes and rinse it.Make sure that the rice using for prepare biryani the grains are old.If you use fresh rice grains, it will become very sticky. In addition, you will not get the properly separated rice grains for the Biryani.
Heat some ghee or oil in a pressure cooker. Add torn bay leaf, 5 broken cardamoms, 6 cloves and 2 small pieces of cinnamon. Fry all masala for few seconds. Then add rinsed rice, stir well with gee and masala. After one minute add water and lemon juice, a pinch of saffron strands some fried onion, then close the lid. Keep the flame in medium and off it when the cooker sounds one whistle. Allow the cooker to release excess pressure in normal way. Then transfer the rice in a bowl.
Make chicken Gravy
Heat 3-4 tsp. oil in a pan, and add some coriander on it. Then put the finely chopped onion and stir well. When the onions become golden, add the 2 fine chopped tomatoes. Stir continue the mixture until it becomes a paste. Now let us move on to the marinated chicken, and add it to the pan. Add a small amount of water to it. Also, add some fried onion, Place a lid on the pan, and let the chicken cook until 80%.
Final Step for Chicken Biryani
Place the cooker ones more on the stove and put one-third of cooked rice into it, add half part of chicken with gravy. Then cover with another one-third of rice. Repeat one more sandwich layer with the rest of chicken and rice. Sprinkle the dry fruit on every layer of the rice. Make sure that the gravy has enough liquid. If not it will chance to burn. Close the lid and keep the flame in medium. After one whistle put off the stove quick and allow the excess pressure to release.
Now your biryani is ready to serve, sprinkle the rest of fried onion and enjoy it.
